Specialties: Open 7 Days a Week Established in 2001. The Cattle Exchange was founded in March 2001. After ten years in franchise restaurants the Cookes started their own concept restaurant located in the Historic Moody Hotel. It was built in the same location were local ranchers would meet and make cattle deals. What an ideal spot to start a steakhouse that cooks hand cut steaks over hot wood coals and slow smokes brisket and hand made sausage over a giant rotisserie pit. Over the years the menu has changed to showcase the unique cuisine of the many different regions of Texas. You can still get a hand cut rib eye steak and slow smoked brisket but there are also many unique items that make Cattle Exchange a destination for Legendary Texas Dinning.
