Philadelphia-born Carlos Fink is opening his first restaurant, Xolo Tacos, in the heart of Bryn Mawr. The restaurant, which plans to open before the end of the summer, replaces the Japanese Fuji Mountain restaurant, located on 14 North Merion Street next to the Bryn Mawr fire station. Transforming the sushi counter into a tequila bar, and working with local producers, Xolo Tacos will offer a menu of fresh tacos and other Mexican specialties, respecting the real customs of the traditional taste and cuisine.
